Meet Edwin Norena's Papayo Washed CM Fermented one of the most expressive coffees we've ever tasted. It's truly a delightful adventure in your cup! This Colombian gem from Campo Hermoso takes your taste buds on a joyride, shifting from sweet florals and juicy citrus to notes of plum, red apple, and cherry cordial as it cools. The magic happens through meticulous fermentation: cherries harvested at peak ripeness undergo 48 hours of anaerobic fermentation followed by 72 hours of carbonic maceration, then natural drying for 8-10 days. The result? A beautifully balanced, expressive coffee bursting with complexity and brightness. Grab yours before it's gone!

The cherries are harvested at over 20° Brix and soaked in water for 2 hours to clean and sort. They undergo an initial anaerobic fermentation for 48 hours. A carbonic maceration is carried out for 72 hours. After the fermentation process, it is processed by pulping and washing the coffee, to be able to dry naturally for 8 to 10 days.
