 Located in the southern foothills of Mt. Kenya, the fertile areas around Kii Factory benefit from rich volcanic soil & can produce some of the top-rated Kenyan coffee. The factory is managed by the Rungeto Farmers' Cooperative Society, one of the smaller umbrella FCSs with a focus on quality processing & details to gain a stellar reputation for their product. At Kii, only ripe cherries are used; extra hand sorting & floating keeps out less dense & damaged beans. After depulping, fermenting & washing, they’re soaked in water for extended periods to create the typical Kenyan profiles. Drying happens on raised beds over 2 weeks & the milled beans are sorted by screen size & graded by shape & size: AA (17/18 screen); AB (15/16 screen); PB (peaberry).
